Buying beef this way lets you fill your freezer, support a local farm, and receive a variety of cuts custom processed for your family.

We will let you know which quarter weights remain available and answer any questions you have.
Each quarter has a different hanging weight and final cost. You’ll know the exact quarter you’re purchasing before committing.
Cuttin Up Meats will contact you directly to discuss steaks, roasts, ground beef, packaging preferences, and pickup arrangements.
Processing begins approximately two weeks after harvest. You’ll pick up your beef directly from the processor.

- You also pay His Hand Holler $62.50 for your quarter share of harvest and transport.
- You pay Cuttin Up Meats directly for processing at $0.90/lb hanging weight.
- Vacuum sealing is included in the processing cost.
How Much Beef Will I Get?
Beef is sold by hanging weight. Your final packaged meat will be less than the hanging weight because of trimming,
bones, fat, and moisture loss during processing. A good estimate is about 60% of hanging weight.

Processing Details
Processing is handled by Cuttin Up Meats. After your reservation is confirmed, we will provide your name and phone number to the processor.
They will contact you directly so you can choose how you want your portion cut and packaged.

- Processing is paid directly to Cuttin Up Meats
- Processing begins no later than 18 June. (Cut sheets due now!)
Because this is custom processed beef from an on-farm harvest, USDA inspection is not available.

Your order may include a mix of steaks, roasts, ground beef, stew meat, brisket, ribs, soup bones, and other cuts depending on your selections and your quarter.
The processor will walk you through your cut sheet so your beef is packaged in a way that works for your household.
